Busy making Cheesy Chicken Chowder

was my status on Facebook this evening. I got a few requests for the recipe so I figured I would post it here on my blog so it would be easier to find then trying to scroll through millions of posts on my facebook wall to find it!

I serve it with French bread or rolls and a salad.

Cheesy Chicken Chowder

4c Chicken broth** 1 1/2c diced potatoes
1c diced celery* 1c diced carrots
1/2c diced onions 1/4c butter
1/3c flour 3c Milk 1tb Soy Sauce
8oz Processed cheese spread, cubed
2c chopped cooked chicken**
(or use canned if in hurry)

Directions:
Combine the broth and the vegetables in a large sauce pan. Cover and cook over medium heat for 15 mins or until the vegetables are tender. Melt the butter in a Dutch oven over low heat. Add the flour, stirring until smooth. Cook for 1 min, stirring constantly. Gradually stir in the milk and cook over medium heat, stirring constantly, until thickened and bubbly. Gradually stir in the vegetable mixture, soy sauce, cheese and chicken. Cook until the cheese melts and soup is thoroughly heated.

Yield: 2 1/2 quarts

* I never add the celery.
** For vegetarians – No-Chicken broth and Quorn’s Chik’n Tenders are perfect. I dump them in while the veggies are cooking.
*** This time I cooked broccoli separate and added it to my bowl. Twas yummy!!!
